U.S. PATENT ISSUED FOR INNOVATIVE COLD BREW COFFEE SYSTEM
ST. LOUIS and PHILADELPHIA, July 9, 2020 – Coffee industry veterans Dan Janson and Dan Pabst have been granted a U.S. patent for their innovation, “Cold Coffee Brewing Method and System.” The patented system uses commercial beer brewing equipment to produce flash-brewed cold coffee in large quantities. It offers several benefits over traditional cold brew coffee methods, including:
● better tasting/higher quality cold coffee because it is brewed hot, brewed quickly, and brewed with minimal exposure to oxygen.
● safer cold coffee by using hot water during the extraction process, followed by a “flash chill” step. Throughout the entire process, the coffee is held at either above 180 F or below 41 F, ensuring proper food safety measures.
● a less expensive and more efficient way to brew cold coffee. The brewing process takes approximately one hour, compared with 12-24 hours for the steeping/cold brew method.
Janson and Pabst believe the patent has significant business development potential in the cold beverage market and are now looking for a partner to commercialize their flash-chilled systems.
“Our system, the flash brew method, optimizes the flavor potential of any origin, blend, or brand of coffee,” said Janson. “This allows craft roasters and brewers to highlight the qualities and characteristics of superior ingredients.”
For Third Wave Coffee roasters, this patent can help them expand their menu offerings to include ready-to-drink (RTD) coffees that incorporate the same qualities of beverages prepared in-store. This is particularly relevant as businesses pivot to take-out, delivery, and mail-order subscriptions.
For craft breweries expanding into regional or national markets, this patent can help them use their existing equipment to grow their brand, diversify their product range, and expand into the fast-growing non-alcoholic adult-beverage category.
“Growth of iced beverages sales are outpacing that of hot coffee in U.S. coffee shops,” said Pabst. “But there is still a gap in the market for large-scale production of quality flash-chilled cold coffee. We have the solution.”
The versatile finished product can be packaged into bottles, cans, and other ready to drink formats or into kegs, bag-in-box dispensers, and other large format containers, and the patent includes an optional system for nitrogenating the coffee during the process. The coffee can also be mixed with other ingredients ― spices, flavors, or alcohols ― to create a truly unique cold beverage.
Janson has more than 30 years in the coffee industry, including owning and operating retail establishments, selling for roasters Chauvin and Ronnoco, as well as equipment manufacturers La Marzocco and FRANKE. He currently sells specialty beverage cleaning supplies for Urnex Brands. In his 25 years of experience with the Specialty Coffee Association (SCA), he has taught a variety of brewing classes, competed and judged barista competitions, and chaired the Brewing Certificate Committee. Janson’s accreditations include: Authorized Specialty Coffee Association Trainer (AST), Certified Master Barista and Gold Cup Technician.
Pabst brings more than 15 years of experience to his role as coffee and product development manager at Melitta North America. His past positions include director of operations for Mudhouse Coffee Roasters, technical brewing innovations expert at FRANKE and innovations consultant with Ronnoco Coffee. In addition to serving on the National Coffee Association’s Next Generation Leadership Council, Pabst is a Licensed Q Arabica Grader, Gold Cup Technician and Examiner, Authorized SCA Trainer and content creator for the SCA Brewing Coffee Skills Program.
Janson and Pabst previously received a patent for another cold brew coffee innovation, “Dual Compartment Beverage Diluting and Cooling Medium Container and System.” Both patents solve the problem of effectively and efficiently producing cold coffee, while optimizing beverage quality.
